Spice, Spirits, and Summer Vibes at Chacho Outpost Pop-Up in Adams Morgan

Adams Morgan just got a whole lot spicier.

Beloved local liquor brand Chacho, known for its jalapeño-infused aguardiente and cheeky llama branding, is heating things up this summer with a brand-new seasonal experience: Chacho Outpost, a fiery upstairs takeover at Le Mont Royal.

Running now through September 27, this bold pop-up brings the spirit (and spice) of South America to the heart of DC nightlife.

Chacho Outpost is a full-sensory celebration of the brand’s signature kick, transforming the second floor of Le Mont Royal into a hideaway where cocktails pack a punch and the vibes are always high.

The pop-up manages to convey a similar vibrant energy to Chacho’s original tasting room in Northwest DC — complete with a fresh rotation of spicy cocktails, DJ sets, and South American small plates to match.

At the bar, expect a creative menu that makes the most of Chacho’s peppery profile. Favorites like the Sassy Llama, Cool As A Cucumber, and Pinky Out bring flavor and flair, while the classic Chacho-Rita shows off the spirit’s smooth, smoky heat. And for those who prefer their drinks sans fuego (or sans alcohol), the Outpost offers a full bar of beer, wine, and zero-proof options, too.

Chef Maria Olimpia’s flavorful bites (think tacos, arepas, and shareable apps) pair perfectly with the spirited sips, rounding out a menu that’s anything but ordinary.

The pop-up officially launched with a grand opening bash on July 12, where guests mingled with founder Dan Ziegler over complimentary tastings and DJ-fueled festivities. And if you missed that party, not to worry —Chacho Outpost continues the fun all summer long, operating Wednesday through Sunday with extended late-night hours on the weekend.

“We’re thrilled to showcase Chacho in such a vibrant part of the city,” says Ziegler, who founded the brand after a fateful, aguardiente-fueled adventure through Colombia (yes, the llama ride is real). We see this as just the beginning. The goal is to keep the Outpost concept evolving, bringing Chacho to new neighborhoods and collaborating with different bars, restaurants, and creative spaces throughout the city and beyond.”

Le Mont Royal’s Chas Jefferson echoes the excitement: “I’ve been using Chacho for a long time in different cocktail programs around town, and we’re so excited to bring that buzz to our upstairs space.“

Whether you’re a longtime Chacho fan or new to its spicy charms, the Outpost offers a fresh excuse to explore DC’s craft spirits scene in style—no passport required.
