“Some of our customers come in very frequently,” explained Chef de Cusine Graham Bartlett of Richard Sandoval’s Zengo in Chinatown. “Test Kitchen is our way of changing up the menu so they have some new things to try.”
The menu at Zengo – which loosely means “give and take” according to Sandoval – is always a flavorful blend of Latin and Asian. Yet every few months, the Chefs develop new recipes to feature the cuisine and spirits of one Latin and one Asian country, resulting in a test kitchen menu of specialty small plates and cocktails that showcase flavors and techniques from a particular region.
February 1-March 15 diners will delight in Shanghai-Sao Paulo, including such specialties as coconut crusted Bohlinos de Bacalhua, Xiaolongboa soup dumplings, and Picana Steak and King Crab.
