Worth the Wait? Silo Finally Opens in Mt. Vernon Triangle

It’s been in the works for over a year, but finally, earlier this month, Silo restaurant — with its raw, industrial interior and juxtaposed contemporary cuisine — opened to the public.  It’s a small space, but it packs a plate.

Silo was created, designed and built by first-time restaurateur Reza Akhavan (former Manager of The Front Page, Opening GM of Shaw’s Tavern), working alongside Restaurant Manager Charlotte Devilliers (Northside Social Coffee Shop and Wine Bar) and Executive Chef George Vetsch (C.F. Folks).

The menu is Contemporary American, but with a Swiss/French twist that pays homage to Vetsch’s heritage and that is made up of fresh ingredients and grains for heath and wellness.  Predicted popular plates include Fried Pumpkin Triangles with Eggplant Tomato Mousse and Garlic sautéed Spinach on Cauliflower Sauce (vegan) and Potato crusted Branzino on sautéed Spinach with Tomato-Olive-Caper Concasse in a Fennel Soubise.
