What’s Cooking Uncle Sam?

Monday morning at the National Archives, James Beard Foundation awardee and celebrity chef Jose Andres announced a partnership with the Foundation for the National Archives to celebrate native ingredients and kick off a series of public programs focusing on the role of government in our daily diet.  He also pledged to create a temporary restaurant as part of the Archives’ upcoming (June 10th) exhibit What’s Cooking Uncle Sam.


The real dish on this news? That pop-up restaurant, America Eats Tavern – which will be serving lunch and dinner starting July 4th – will take the place of Andres’ popular Cafe Atlantico.  For now, Atlantico’s upstairs ‘Minibar‘ will remain unchanged.  At the conclusion of the exhibit, however, Andres will announce plans for what is rumored to be either an expansion of Minibar or a completely new concept in the former Atlantico space.
