Praising the Plates of Peru

“Peru’s cuisine is one of the most interesting of the South American countries to me,” said Ridgewell’s new Corporate Chef Robert Gadsby, in attendance at the Organization of American States Wednesday evening.  His Excellency Jose Miguel Insulza, Secretary General of the Organization of American States, and His Excellency Hugo de Zela Ambassador of the Republic of Peru invited Gadsby and other guests to dine on Peruvian cuisine as Peru was awarded the Cultural Heritage of the Americas Award.

“I first tried Peruvian food in Texas, of all places!” laughed Gadsby as he looked forward to the evening’s tastes of Ceviche, Tiraditos, Chupe and Seco.
 
“As a cuisine, it’s not really anything new – the method is the same… and the ingredients are available here in the states – but its application is creative.  It’s pretty easy to find a Peruvian dish I like and really make it my own… so I’m looking forward to the dinner tonight!”
 
The evening’s event and focus on Peru was a part of the OAS’s Celebration of the Inter-American Year of Culture.
