New All-Day Egg Concept Coming to Ballston from Taco Bamba/Poca Madre’s Chef Albisu

Chef Victor Albisu — a favorite from his former Del Campo to Taco Bamba to newly Michelin starred Poca Madre — announced plans to open, Huevos, an all-day egg concept, at The View at Liberty Center in Ballston next spring.

“There is nothing more versatile and delicious than eggs. My biggest challenge with this concept will be figuring out where to stop,” said Albisu. “I could eat eggs all day, and I do, so the menu possibilities are endless. While eggs are the star, the dishes will be as surprising and craveable as anything from Taco Bamba. We’re opening an all-day spot here. Eggs were never meant just for breakfast.”

Menu teasers tell us to look for instant classics like bacon, egg and cheese empanadas, brisket chilaquiles, and egg salad topped with caviar (also eggs!), as well as more adventurous items like green eggs and jamón and a crispy egg roll, with soft scramble, ground chorizo, poblanos, Monterey jack, chipotle ketchup, and pineapple sweet & sour sauce. Think flans and egg custards for dessert.

Located at 4000 Wilson Blvd., the 1,500-square-foot fast-casual will also feature coffee, a modest bar with a list of craft beers, mimosas and Bloody Marys, and is already expecting to feature a Sunday brunch.
