Jose Andres At It Again, This Time Chinese-Peruvian

The tireless José Andrés is at it again.  Celebrating 10 years of Minibar, opening Barmini, and proliferating his Spanish tapas concepts like Jaleo, Oyamel, etc., the chef who championed his culture’s cuisine onto the America palate is now opening a modern Chinese-Peruvian concept in the heart of Penn Quarter.

Andres isn’t a stranger to fusion food (see his popular China Poblano in Las Vegas), and this one’s a Chifa repeat, melding Chinese style and native Peruvian ingredients.  China Chilcano — its working name — “will pay homage to Peru’s celebrated fish stew and one of its more traditional drinks, the chilcano” according to a release earlier this week, and its menu will include everything from “classic Peruvian causas or ceviches, to Asian favorites like dim sums and sumais.”

China Chilcano will be located at 418 7th St, NW, and is scheduled to open in the spring of 2014.
